Janak Bardoliya, a culinary blogger from Surat, published the video on Instagram. It shows a street vendor preparing egg pani puri. The vendor stuffs egg whites with tomato sauce and fresh cream. He then grates cheese on top of them, sprinkles masalas on top, and garnishes the eggs with coriander leaves.
The addition of egg pani puri demonstrates the ever-changing nature of street food. It indicates sellers' desire to push limits, use new ingredients, and accommodate changing tastes. While some purists said that the lack of pani and puri violates the dish's integrity, others welcomed the inventiveness and unexpected flavour of the dish.
