Almonds and pistachios give thandai a creamy texture, while saffron, cardamom, and dried rose petals add fragrance and flavor. Soak almonds, pistachios, and rose petals for 4-5 hours. Blend with milk, sugar, cardamom, and saffron until smooth. Strain and serve chilled.

Blend pineapple juice, jalapeno/green chili, coriander, lemon juice, and maple syrup on high speed for one minute until smooth. Strain to remove solids, then pour over ice. Serve immediately for a refreshing twist.

Soak poppy seeds overnight. Grind them with almonds, lavender, cardamom, and peppercorns into a fine powder. Heat milk in a saucepan, stir in condensed milk and the ground mixture, and let it simmer for 15 minutes. Cool, refrigerate, and strain before serving over crushed ice.?

Kokum Sharbat
Soak dry kokum in hot water for 2.5 hours. Blend into a fine paste. Cook water and sugar until dissolved, then add the paste, cumin, black pepper, and salt. Cook for 10 minutes, add lemon juice, strain, and cool. Mix 2-3 tbsp syrup, crushed cumin, ice, and water. Stir and serve.

Angoori Chaska
Blend black grapes, sugar, ginger, and water until smooth. Mix in fresh orange juice and strain. Pour into a glass with ice cubes. Garnish with a lemon slice and mint sprig.?

Muddle mint leaves with a pinch of salt in a glass. Add fresh lemon juice. Fill the glass with ice and top up with soda. Stir well and serve chilled.
