1. Apple Pie Samosas

Ingredients
? 2 cooking apples, peeled, cored and chopped
? 50g caster sugar
? 1 tsp ground mixed spice
? 50g sultanas
? 12 samosa pattis
? 25g low-fat spread, melted
Method
Heat oven to 200C/180C fan/gas 6. Place the apples, sugar, mixed spice and sultanas in a saucepan with 2 tbsp water and cook, covered, for 6 mins or until the apples are soft, stirring once or twice. Tip into a shallow dish and spread out to cool slightly.
Brush the samosa pattis slightly with the melted spread. Place a spoonful of the apple filling at the top of each strip, then fold over and over to form triangular parcels. Place on a baking sheet and bake for 15-20 mins until crisp and golden. Serve with low-fat yogurt, if you like.

2. Classic Applesauce

Ingredients
? 4 pounds apples
? 1/4 cup fresh lemon juice (from 2 lemons)
? 3 tablespoons dark-brown sugar (optional)
Method
? Peel, core, and slice apples.
? In a large pot, bring apples, lemon juice, and 1 1/2 cups water to a boil over high. Reduce heat and simmer until apples are very soft and falling apart, 25 to 30 minutes.
? Mash with a potato masher or pulse in a food processor until smooth with small chunks remaining. (Add sugar, if using.)
? Let cool, then transfer applesauce to airtight containers.

3. Chicken Apple Stir Fry

Ingredients
? 3 chicken breasts or the meat from 1 whole roasted chicken
? 2 tablespoons butter or coconut oil
? 2 apples
? 1 onion
? 1 bulb of fennel (can replace with another onion if you don't like the taste of Fennel)
? 1 teaspoon each of salt, pepper, garlic powder and basil
Method
? Cut the chicken into bite sized pieces. If chicken is raw, heat butter/coconut oil in large skillet or wok until melted.
? Add chicken and cook on medium/high heat until chicken is cooked through. (If chicken is pre-cooked, cook the vegetables first then add chicken)
? While cooking, cut the apples and onion into bite sized pieces (1/2 inch) and thinly slice the fennel bulb into thin slivers.
? Add all to skillet or wok, add spices and continue saut¨¦ing until all are cooked through and fragrant. This will take approximately 10-12 minutes.

4. Mulled Apple Juice

Ingredients
? 1 litre apple juice
? Strips of orange peel
? 1 cinnamon stick, plus extra to garnish, if you like
? 3 cloves
? Sugar or honey, to taste
Method
? Simmer the apple juice with the strips of orange peel, cinnamon stick and cloves for about 5-10 mins until all the flavours have infused. Sweeten to taste.
? Serve each drink with a little orange peel and a piece of cinnamon stick, if you like.

5. Apple and Cheddar Frittata Recipe

Ingredients
? 8 large eggs plus 2 large egg whites
? I cup cheddar cheese, coarsely grated
? Coarse salt and ground pepper
? 1 tablespoon butter
? 2 large apples, peeled, cored, and sliced lengthwise into 1/8-inch-thick pieces
Method
? Preheat oven to 450 degrees, with rack set in top third. In a medium bowl, whisk together eggs, egg whites, and half the cheese; season with salt and pepper. In a medium cast-iron or nonstick ovenproof skillet, heat butter over medium. Add egg mixture; while it cooks, 1 to 2 minutes until edge is set, arrange apples on top in a circular pattern, starting from the outside edge, and sprinkle with remaining cheese.
? Transfer skillet to oven. Bake until frittata is set in the center and cheese is browned, about 20 minutes. Using a rubber spatula, release frittata onto a cutting board; let rest 5 minutes. Cut into wedges, and serve.

6. Carrot Apple Salad with Yogurt Dressing

Ingredients
For the Salad
? 2 carrots, shredded
? 2 apples, peeled and diced
? 1/4 cup of golden raisins
? 1/4 cup of walnuts, toasted and chopped (optional)
For the Dressing
? 1/3 cup plain non fat yogurt
? 1/4 tsp orange zest
? 3 tbsp freshly squeezed orange juice
? 1 tsp honey
? 1/8 tsp cinnamon
Method
? In a large bowl toss together the shredded carrots, apples, raisins, and walnuts.
? In a small bowl whisk together the dressing ingredients.
? Pour the dressing over the salad and mix until everything is coated.

7. Healthy Apple Crumble

Ingredients
? 1 medium-sized apple, diced small
? 1/8 tsp salt
? 2 tbsp milk of choice
? 1/2 tsp powdered cinnamon
? 1 stevia packet or 1-2 tbsp sugar
? Optional add-ins: walnuts, raisins, etc.
? 3 tbsp quick oats
? 2 tsp oat flour (or another flour of choice)
? 1 tbsp oil or butter-type spread
Method
? Preheat oven to 350 F and grease an oven-safe 2-cup dish.
? In a small mixing bowl, combine first five ingredients (and optional add-ins, if desired). Stir well.
? In a separate mixing bowl, combine remaining three ingredients and stir well. Now mix everything together and pour into the greased dish. (If you like a more-crumbly crumble, increase the amounts of the last three ingredients.)
? Bake 40 minutes (in the middle of the oven, not the very top), then turn the oven to high-broil for 2-3 minutes.
? Turn off heat, but let sit in oven 15 more minutes.
