9 Spinach Recipes So Delicious, Even Popeye Would Lap 'Em Up
Tender, fresh spinach is a healthy addition to many meals. Delicious in salads, smoothies or soups, this leafy green is equally tasty raw or cooked. Spinach is loaded with nutrients, such as folate, vitamin E and lutein, which help keep your body healthy and strong.

1. Grilled chicken with spinach and melted mozzarella.

Ingredients
? 3 large chicken breasts sliced in half lengthwise to make 6 cutlets
? Salt and pepper to taste
? 1 tsp olive oil
? 3 cloves garlic, crushed
? 10 oz frozen spinach, drained
? 3 oz shredded part skim mozzarella
? 1/2 cup red capsicum, sliced in strips (packed in water)
Method
? Preheat oven to 400¡ã. Season chicken with salt and pepper. Lightly oil the grill. Cook chicken on the grill until no longer pink, careful not to overcook or you'll have dry chicken.
? Meanwhile, heat a saut¨¦ pan on medium heat. Add oil and garlic, saut¨¦ a few seconds, add spinach, salt and pepper. Cook a few minutes until heated through.
? When chicken is done, lay on a baking sheet lined with foil or parchment for easy clean-up. Divide spinach evenly between the 6 pieces and place on top. Top each with half oz mozzarella, then slices of roasted pepper and bake until melted, about 6-8 minutes.

2. Strawberry and spinach salad.

Ingredients
? 7 -10 cups fresh Baby Spinach (washed, dried and stems removed, or use as much as desired)
? 5 cups sliced fresh strawberries
? 1?4 cup toasted sliced almonds
? 1?2 cup crumbled feta cheese
For the dressing
? 1?2 cup vegetable oil
? 1?4 cup balsamic vinegar (or use raspberry wine vinegar or white wine vinegar)
? 1?4-1?3 cup white sugar
? 1 pinch paprika
? 1 -2 tablespoon poppy seed
Method
? In a large bowl toss the spinach with the strawberries and toasted almonds.
? In another small bowl whisk together all dressing ingredients, starting with 1/4 cup sugar and adding in more to taste, then pour over the spinach; toss to combine.
? Sprinkle the feta over the top of salad.
? Serve immediately.

3. Spinach, feta and tomato samosa.

Ingredients
? 150 grams fresh spinach leaves (palak) shredded
? 1 cup Feta cheese crumbled
? 6 tomatoes finely chopped
? 8 samosa patti sheets
? 2 tablespoons olive oil
? 2 teaspoons garlic finely chopped
? 1 medium onion finely chopped
? Salt to taste
? Black pepper powder to taste
? Oil for deep-frying
Method
? Heat olive oil in a non-stick pan, add garlic and saut¨¦ for a minute. Add onion and saut¨¦ further for two to three minutes.
? Add spinach and cook, stirring continuously, for two to three minutes. Remove from heat, add salt and pepper powder and mix well.
? Heat sufficient oil in a kadai.
? To make samosa, cut the each patti into half, apply water on the edges. Shape each half into a cone and stuff it with the spinach mixture, put cheese and tomato over it. Seal the edges well.
? Slide in the samose into hot oil and deep-fry till crisp and golden brown. Drain on absorbent paper.

4. Spinach soup.

Ingredients
? 25g butter
? 1 bunch spring onions, chopped
? 1 leek (about 120g), sliced
? 2 small sticks celery (about 85g), sliced
? 1 small potato (about 200g), peeled and diced
? ? tsp ground black pepper
? 1l stock (made with two chicken or vegetable stock cubes)
? 2 x 200-235g bags spinach
? 150g half-fat fresh cream
Method
? Heat the butter in a large saucepan. Add the spring onions, leek, celery and potato. Stir and put on the lid. Sweat for 10 minutes, stirring a couple of times.
? Pour in the stock and cook for 10 ¨C 15 minutes until the potato is soft.
? Add the spinach and cook for a couple of minutes until wilted. Use a hand blender to blitz to a smooth soup.
? Stir in the fresh cream. Reheat and serve.

5. Simple saut¨¦ed spinach.

Ingredients
? 2 tablespoons extra-virgin olive oil
? 4 cloves garlic, thinly sliced
? 2 bunches fresh spinach
? 1 tablespoon lemon juice
? 1/4 teaspoon salt
? 1/4 teaspoon crushed red pepper
Method
? Heat oil in a saucepan over medium heat.
? Add garlic and cook until beginning to brown, 1 to 2 minutes.
? Add spinach and toss to coat. Cover and cook until wilted, 3 to 5 minutes.
? Remove from the heat and add lemon juice, salt and crushed red pepper. Toss to coat and serve immediately.

6. Eggs with spinach and tomatoes.

Ingredients
? 2 teaspoons olive oil, divided
? 1 cup grape or cherry tomatoes
? 1 bunch spinach, stems removed
? Salt and pepper
? 2 large eggs
Method
? In a medium nonstick skillet, heat 1 1/2 teaspoons oil over medium.
? Add tomatoes and cook until softened, about 3 minutes. Add spinach and cook until wilted, 2 minutes; season with salt and pepper.
? Transfer to a bowl, wipe out pan, and add remaining 1/2 teaspoon oil.
? Add eggs to skillet and cook until whites are set but yolks are still runny, 2 to 3 minutes. Season with salt and pepper and serve on top of vegetables.

7. Spaghetti with spinach & garlic.

Ingredients
? 500g pack wholewheat spaghetti
? 500g leaf spinach
? 3 tbsp olive oil, plus extra to serve
? 4 garlic cloves, finely sliced
? 2 tbsp red wine vinegar
? Handful nuts of your choice
? 50g parmesan, half grated, half shaved
? Chilli flakes, to serve
Method
? Cook the spaghetti according to pack instructions. Meanwhile, boil the kettle and tip the spinach into a large colander. Pour on boiling water until it¡¯s completely wilted (you may need 2 kettles of water), then cool under cold water and press the spinach into a ball, squeezing out all the water. Roughly chop the spinach and set aside.
? Very gently heat the oil and garlic in a small pan for a few mins until it just starts to brown, then add the vinegar. Bubble for 1 min, then turn off the heat. When the spaghetti is cooked, reserve some of the water, then drain.
? In a large bowl, toss the spaghetti with the garlicky oil, spinach, nuts and the grated Parmesan. Add enough water to loosen everything. Serve in bowls along with the Parmesan shavings and chilli flakes, plus more olive oil for drizzling.

8. Green apple and spinach smoothie.

Ingredients
? 1 lime
? 1 cup coconut milk
? 1 large green apple
? 2 cups baby spinach
? ? cup yogurt
? Ice cubes
? 2-5 mint leaves
Method
? For the green layer, mix spinach, 1/2 cup coconut milk, ice cubes, 1/2 of the green apple (chopped) and the lime juice.
? Blend together and add to cup. Rinse your blender and then combine 1/4 cup coconut milk, 1/2 cup yogurt (green yogurt or vanilla yogurt work great), 1/2 of the green apple (chopped) and fresh mint leaves if you like mint!
? Blend, add to your glass and garnish with an apple slice.

9. Spinach pancakes.

Ingredients
? 1 cup packed fresh spinach
? 1 cup buttermilk
? 1 large egg
? 1 tablespoon oil
? 1 cup white whole wheat flour
? 1 tablespoon sugar
? 1 teaspoon baking powder
? 1/2 teaspoon baking soda
? 1/2 teaspoon salt
Method
? In a blender, combine the spinach, buttermilk, egg, and oil and blend until smooth.
? In a separate bowl, whisk together the remaining ingredients.
? Whisk the wet ingredients into the dry ingredients until just combined.
? Heat a large pan or griddle over medium heat and grease with butter or oil.
? Pour about 1 tablespoon of the pancake mixture onto the griddle, making as many pancakes as will fit and cook for 2 minutes.
? Flip the pancakes and cook for one minute longer and serve.
