Coconut Rice With Beans

Ingredients
? 2 tbsp extra light olive oil
? 1 onion, finely chopped
? 4 cloves of garlic, finely chopped
? 1 tsp ginger, finely chopped
? 2 tsp thyme
? 2 cups long-grain rice, soaked in water (sela rice)
? 2 cups chicken or vegetable stock
? 2 cups coconut milk
? 1 cup kidney beans (rajma)
? Salt and black pepper to taste
Method
? Heat the oil in a pan, add the garlic, onion, ginger and thyme and cook for 1-2 minutes.
? Drain the rice of water and add the rice to the pan. Mix well.
? Add the chicken or vegetable stock, coconut milk, salt and black pepper powder and cook for 1 minute.
? Add the kidney beans, mix well, then cover the pan and cook for 2-3 minutes.
? Serve hot.
