Recipe for avocado toast with scrambled eggs
Ingredients:
1 slice of bread (preferably sourdough bread)
1 small avocado
2 large eggs
2 tbsp butter
2-3 tbsp milk
1 tbsp lemon juice (freshly squeezed)
Instructions:
- To start with your scrambled eggs, crack eggs into a bowl and add milk, salt and black pepper.
- With a small whisk or fork beat the eggs and milk until you are left with a creamy yellow mixture with no visible bits of yolk.
- Then spread butter on a pan while keeping the flame on low. Once the butter has melted add your egg mix.
- Let the mix cook undisturbed for a couple of minutes and then pull a rubber spatula across the bottom of the pan to form large and soft lumps of scrambled eggs.
- Continue cooking on low heat while continuously folding and stirring the eggs to form creamy lumps of eggs and prevent them from drying out.
- Your scrambled eggs are ready! Take the pan off the heat and set aside.
- Toast the bread as per your liking and then butter it.
- Halve the avocado and remove the pit. Then scoop and mash the fruit, sprinkle it with lemon juice, and season it with salt and black pepper.
- Layer the mashed avocado on the buttered bread and top it up with steaming scrambled eggs.
- Sprinkle with flaky salt and freshly ground black and pepper and enjoy!
