5 Yummy Modak Recipes with a Twist

While the traditional variety of modaks are filled with grated coconut and jaggery, food lovers are experimenting with a variety of fillings. Dal Modak

Ingredients:

For filling:

1 cup Split Black Gram soaked in water
? cup Milk
8-10 Curry Leaves
2 tsp Mustard Seeds
Salt to taste
A pinch Asafoetida
1 tsp Crushed Black Pepper

For Dough:
?
1 ? cup Rice Flour
? cup Milk
?
For Garnish:
?
Betel leaves
Rose flower leaves

Method:
?
1. Grind split black gram with water in a mixer.
?
2. Now heat a pan, mix milk, curry leaves, mustard seeds, grinded split black gram, water, salt, asafoetida and red chilli powder in it to prepare a mixture.
?
3. After this, mix rice flour, hot water and milk in a bowl to knead a dough, rest it for 2 mins. Next, flat the dough and fill it with the prepared mixture.
?
4. Now, shape the dough and cook it in the dimsum basket.Garnish the prepared modak with betel leaves and rose flower leaves.
Coconut Modak

2-2 ? tbsp Desi Ghee
5 tbsp Freshly grated Coconut
3 tbsp Jaggery
1 ? tbsp Cardamom Powder
?
For Dough:

1 ? cup Rice Flour
? cup Milk

For Garnish:

Desi Ghee
Cardamom Powder

Method:
?
1. Heat desi ghee in a pan, add grated coconut, grated jaggery and cardamom powder in it to prepare a mixture. Now, flat the dough and fill it with the prepared mixture.
?
2. Next, shape the dough and cook it in the dimsum basket for 4-5 mins. Garnish the prepared modak with rose flower leaves, desi ghee and cardamom powder.?

Silver chocolate modak

Ingredients:?
?
150 gm gram flour (besan)
400 gm sugar
400 ml water
100 ml milk
700 ml desi ghee
1 gm saffron (soaked in 10 ml water)
10 gm green cardamom seeds (coarsely powdered)
20 gm almonds (slivered)
20 gm pistachios (skinned and sliced)
40 gm dark chocolate
1 packet edible silver leaves (varq)

Method:
?
1. Boil sugar with water to make syrup of one string consistency.
?
2. As the sugar dissolves and bubbles start to appear on the surface, add milk and turn the flame to medium high. Remove the froth so the sugar syrup gets cleared. Strain this syrup through a muslin cloth and keep aside.
?
3. Add the saffron water. Make a thin batter of gram flour with water (pouring consistency).
?
4. Heat ghee in a wok. Hold a very finely perforated spoon over the hot ghee, pour a little batter over it, and pass the batter through it fast into the wok to make motichoor.
?
5. Fry for about two minutes. Remove the motichoor from wok with the help of a slotted spoon. Drain thoroughly and put into the sugar syrup.

6. Remove after five minutes and add cardamom. Cool the mixture at room temperature.
?
7. Add almonds, pistachios and shaved chocolate. Divide mixture into equal portions and shape them into laddoos.
?
8. Twist the top of laddoo to give a modak shape. Cover the modak completely with silver leaves on all sides.
Matar Aur Farsan Ke Modak?

Ingredients:

50 gms Onion
1 Small Bunch Of Coriander
50 gms ?Ghee?
Salt to taste?
White Pepper Powder to taste?
1 tsp Chat Masala?
10 Green chillis?
?
For Green Chutney:
?
1 Sour lemon ?
1 small bunch Of Mint?
1 Fresh Coconut
?
Method:
?
1. Put ghee in a pan. Saut谷 the onions and add the fresh green peas. Saut谷 it for 3 mins. Then add salt and pepper.
?
2. Take mixed farsan and crush it. Add chopped chillis, onions, coriander and chaat masala and squeeze the lemon juice.
?
3. Take a mould of modak and line the cooked split green peas. Apply the paste on top and keep some halves in the centre.
?
4. Make balls of farsan and put in the centre and press other halves of modak mould on each other. Remove it from the mould.
?
5. Garnish it with roasted whole green peas. Serve with green mint, coconut chutney and date tamarind sweet chutney.?
