To access your Google activity, visit this website - myactivity.google.com. The website offers three options - web and app activity, YouTube history, and location history. Each option has a corresponding box which you can simply untick and save changes to prevent Google from logging this data.
If you wish to keep the trackers on, simply ensure the relevant boxes are ticked. Besides this, you can delete and see any activity that has stored on your Google account, including services like Chrome and Google Play pool of services.

Need more customisation? Worry not, there are multiple sub-settings for you to customise what Google can track and what it cannot.
