Potatoes: 4 large, boiled and mashed?
Garlic: 4 cloves
MincedGinger: 1-inch piece,?
GratedGreen chilies: 2-3,?
Finely choppedCurry leaves: 8-10,?
ChoppedMustard seeds: 1 teaspoon?
Turmeric powder: 1/2 teaspoon?
Salt: to taste?
Coriander leaves: a handful,?
ChoppedBesan (gram flour): 1 cup?
Baking soda: a pinch?
Oil: for frying?
Pav (bread rolls): 8?
Green chutney and tamarind chutney: for serving
Prepare the Potato Mixture:Heat a tablespoon of oil in a pan.?Add mustard seeds and let them splutter.Add minced garlic, grated ginger, chopped green chilies, and curry leaves. Saut¨¦ for a minute.Add turmeric powder and mashed potatoes.?

Shape the Vadas:Once the potato mixture is cool enough to handle, divide it into equal-sized balls and flatten them slightly to form patties.?
Prepare the Batter:In a bowl, mix besan, salt, a pinch of turmeric powder, and a pinch of baking soda.Gradually add water to make a smooth, lump-free batter with a thick consistency.?
Dip and Fry:Heat oil in a deep frying pan over medium heat.Dip each potato patty in the batter, ensuring it's well coated.Carefully place the coated patty into the hot oil and fry until golden brown and crispy. Remove and drain excess oil on a paper towel.
