Ingredients
For Frankie masala
2?tsp red chilli powder
2?tsp coriander powder
1?tsp garam masala
2?tsp roasted cumin powder
??tsp ?turmeric powder
??tsp?black pepper
1?tsp?Himalayan pink salt
2?tsp?dried mango powder
For stuffing
2?cups?potatoes?(boiled, peeled and mashed)
1 finely chopped onion
2-3 green chillis
??inch?ginger
2?cloves?garlic
2?tbsp coriander leaves (finely chopped)
1?tbsp oil
1 tbsp frankie masala
For dough
??cup?all-purpose flour
??cup?wheat flour
2 tsp oil
??cup?water?(to knead the dough)
pinch of salt
For the roll
1 tsp mint coriander green chutney
? tsp chaat masala
1 tsp tomato ketchup
2 tsp finely chopped onion
butter paper (for wrapping)

- In a large bowl, combine all-purpose flour, wheat flour and salt. Mix well.
- Add a little water at a time and knead the mix into a soft dough. Grease the dough with a little oil and keep aside to rest for 20 minutes.
- In the meantime, heat oil in a pan on medium heat, and add green chillies, ginger and garlic and cook it for 30-40 seconds.?
- Then add frankie masala and chilli powder to the mix and cook it for 10-20 seconds after lowering the heat.?
- Add the boiled potatoes and mix well. Turn off the heat and to mix add fresh coriander leaves. Set the stuffing aside and let it cool.?
- Now, take the rested dough and knead it once more to form small balls.
- Dust a dough ball with all-purpose flour and roll thinly to make a roti.
- Cook the roti on a hot pan greased with oil and flip it to cook on the other side. Once the rotis are cooked keep them aside for assembling.
- By now the potato stuffing must have cooled down. Divide the potato mix into 4 equal portions and shape each into a cylindrical log.
- Heat the pan to medium heat, add oil and shallow fry the cylindrical logs until they turn golden brown. Once the logs are fried, take them off the heat and prepare to assemble the frankie.
- To assemble, spread green chutney evenly on a roti and place the prepared cylindrical log in the centre. Top it up with chaat masala, onion, coriander and tomato ketchup.
- Roll the roti tightly and wrap it up with butter paper.
- Serve hot with more green chutney and tomato ketchup on the side for dipping and enjoy with your favourite cup of chai!
