Dussehra symbolises the victory of good over evil and is celebrated by everyone across India with pomp and splendour.Whether you are visiting a Durga Puja pandal, or planning to visit a Dussehra Mela to witness the burning of effigies of Ravana, Kumbhakarna and Meghanada, the day is a joyous affair. After nine days of Navratri fasting, food takes centre stage during the festivities. Since no celebration is complete without sweets, we've got some easy recipes for you to make delicious desserts at home and enjoy with your loved ones.
Easy recipes to make desserts at home on Dussehra
Here are step-by-step guides to three classic desserts we all know and love.
Kesar Jalebi
Ingredients
100 gm sour curd
500gm refined flour
1L water
1kg sugar
Oil or ghee for frying
1/2 teaspoon lemon juice
1/2 teaspoon cardamom powder??
few stands of saffron
orange food colour (optional)
Instructions
- To prepare the batter, mix sour curd and refined flour and gradually add water to form a thick and smooth sludge of piping consistency. Set it aside and let it rest for 30 minutes.
- To make the sugar syrup, take a saucepan and add sugar to boiling water. Wait until the sugar completely dissolves and then add cardamom powder and lemon juice. Once the mix has thickened slightly, take it off the heat and set it aside.
- Now heat oil or ghee for frying and transfer the batter to a piping bag. Once the oil is hot, start piping the batter into circular, spiral shapes in the oil.
- Fry the jalebi spirals until golden brown on both sides and immediately dip the fried jalebis into the warm sugar syrup.
- Take the jalebis out of the syrup and dish it on a plate. Serve warm with a side of rabri or milk.
Besan Ladoo
Ingredients
1 cup besan (gram flour)
1/2 cup ghee
3/4 cup powdered sugar?
1/4 teaspoon cardamom powder
2 tablespoons chopped nuts (almonds, and pistachios)
A pinch of salt??
Instructions
- Heat the ghee in a heavy pan and add besan to it. Gently roast the besan while stirring it continuously. Cook it for about 10-15 minutes till the besan turns golden brown, and then take it off the heat.
- Once cooled, add sugar, cardamom powder, a pinch of salt and chopped nuts and gently fold it in to combine with the roasted besan.
- Once the mixture is cool enough to touch, start rolling it into small laddoos and set them on a plate. Make sure to grease your hands with ghee before starting this step.
- Once all the ladoos are formed, garnish them with almond chunks and enjoy!
Kala Jamun
Ingredients
1 cup khoya?
1/4 cup all-purpose flour?
1/2 teaspoon lemon juice??
1/4 teaspoon baking powder
1/4 teaspoon cardamom powder
1 cup sugar
1/2 cup water??
Oil or ghee for frying??
Instructions
- Take a saucepan and add sugar to boiling water. Wait until the sugar completely dissolves and then add cardamom powder and lemon juice. Once the mix has thickened slightly, take it off the heat and set it aside.??
- Now that your sugar syrup is ready, prepare your dough by mixing the khoya, all-purpose flour and cardamom powder. Knead until a smooth dough forms. If the mix is too dry, adjust the consistency by adding milk.
- Just like ladoos, form small balls with the dough. In the meanwhile heat oil or ghee for frying.?
- Once the oil is hot, drop the balls and fry them until they turn dark brown. Once the balls start floating on the surface, it is time to get them out. Make sure you are frying them on low heat so that they cook through without burning.
- Once fried, take the balls out on a plate lined with paper towel or newspaper and drain the excess oil.
- Soak the fried dough balls in the sugar syrup for at least 30 minutes.?
- Garnish them with chopped pistachios and serve!
