1) Watermelon Feta Salad
Ingredients
For salad:
? watermelon (chopped into cubes)
2 cups chopped English cucumber
fresh mint leaves
fresh basil leaves
? cup crumbled feta cheese
For Dressing:
2 tbsp honey
2 tbsp lemon juice
1-2 tbsp extra virgin olive oil
salt & black pepper
Instructions
- In a small container, add honey, lemon juice and olive oil and whisk together until combined. Add a pinch of salt and black pepper and set aside.
- In a large bowl combine watermelon, cucumber and fresh herbs.
- Add the prepared dressing to the salad and gently toss to combine.
- Top the finished salad with feta cheese and serve!

2) Mohabbat Ka Sharbat
Ingredients
4 cups full-cream milk
2 tbsp Rooh Afza
? cup sugar
2 tbsp basil seeds
2 cups finely chopped watermelon
ice cubes (optional)
Instructions
- In a large bowl, combine chilled milk with ice cubes to make it even more cold.
- Now add Rooh Afza and sugar and mix well.
- To the mix, add watermelon cubes and basil seeds.
- Taste and adjust the quantity of Rooh Afza and sugar.
- Serve in a tall glass and enjoy!
3) Watermelon Gazpacho
Ingredients
2 cups of diced watermelon
3 medium ripe tomatoes
1 English cucumber (peeled)
? small red onion
1 small garlic clove
? capsicum fresh basil leaves
1 tsp Tabasco 2 tsp apple cider vinegar
4 tsp extra virgin olive oil salt & pepper (to taste)
Instructions
- Roughly chop watermelon, tomatoes, capsicum, onion and cucumber. Remove seeds from watermelon.
- In a food processor, add all the vegetables with olive oil, garlic and basil leaves, and blend until smooth.
- Season with Tabasco, apple cider vinegar, salt and pepper.
- Put the soup in the fridge for at least an hour before serving.
- Top with fresh basil, tiny cubes of cucumber and watermelon, a drizzle of olive oil and freshly ground pepper.
- Serve and enjoy!
