A video of this creation was shared by an Instagram account called Food Porn, showcasing what they described as "a performance of food and art."
This unique rendition of Onam Sadhya, served at Tresind Studio, is prepared by their skilled kitchen staff.
In the video, each element of the dish is meticulously arranged by the staff.
It starts with a grilled pineapple marinated in Indian spices, followed by layers of cream of rice, payasam, banana pickle, cuddapah almonds, coconut ice cream, mela blossom flower, and a piece of papadam. This bite-sized creation is complemented by a side of tomato broth infused with spices.
After the dish is prepared, one of the restaurant staff members explains the inspiration behind each ingredient saying, "Traditionally, this is how a sadhya is performed."
An insult, say netizens
The Kerala Sadhya is a grand meal consisting of over 20 different dishes, predominantly vegetarian, traditionally served for lunch on the final day of the 10-day Onam harvest festival.
The term "sadhya" translates to "banquet" in Malayalam. This feast typically includes an array of savory dishes, rice preparations, and desserts, all served on a banana leaf.
However, this particular rendition of the Onam Sadhya didn¡¯t go down well with people.
One commenter expressed disbelief, stating, "As a professional onam celebrator from the official onam land, THIS IS NOT ONAM SADHYA."
Another, hailing from Kerala, affirmed, "I'm from Kerala, where the 'onam sadhya' is originated & I can say for sure that this is not how a sadhya looks like."
Some criticized the dish's perceived costliness, jesting, "That would be $4399 sir plus taxes??"
And one comment simply deemed it an "atrocity and insult" to the tradition of Onam Sadhya, particularly noting the inclusion of "Cuddapah almonds," a departure from tradition.
