While a great quick snacking option for evenings, nachos can be enjoyed at any time of the day with some fresh guacamole or salsa and are also a delicious side dish option for tacos or quesadilla or literally anything Mexican.?
The origin of nachos can be traced back to?Piedras Negras, a city across the border of USA's Texas in Mexico. According to tales, back in 1943, the wives of American soldiers who were stationed nearby came to visit a hole-in-the-wall restaurant that was owned by?Ignacio Nacho Anaya. Due to the late hour and lack of ingredients, he made a quick and experimental meal by baking tortillas topped with shredded cheese and jalapeno peppers. He then named the "Nacho¡¯s Especiales", and the rest is history!

? small lemon juice (freshly squeezed)?
? cup corn kernels (boiled)? ?
1 tsp salt
For cheese sauce:
2 tbsp butter?
? tsp turmeric powder?
300 ml milk?
? cup cheese (grated)
2 tbsp corn-starch slurry?
1 ? tsp chilli oil (optional)
For nacho spice:?
1 tbsp cumin seeds?
2 tbsp coriander seeds
1 tsp salt
1 tbsp red chilli powder
? tsp dried mango powder?
1 tsp dried oregano??
