1. Banana Bread

Ingredients
? 1/2 cup (1 stick) butter, at room temperature, plus more for pan
? 1 cup granulated sugar
? 2 large eggs
? 1 1/2 cups unbleached flour
? 1 teaspoon baking soda
? 1 teaspoon salt
? 1 cup mashed very ripe bananas
? 1/2 cup sour cream
? 1 teaspoon vanilla
? 1/2 cup chopped walnuts
Method
? Preheat oven to 350 degrees. Butter a 9-by-5-by-3-inch loaf pan; set aside. In an electric mixer fitted with the paddle attachment, cream butter and sugar until light and fluffy. Add eggs, and beat to incorporate.
? In a medium bowl, whisk together flour, baking soda, and salt. Add to the butter mixture, and mix until just combined. Add bananas, sour cream, and vanilla; mix to combine. Stir in nuts, and pour into prepared pan.
? Bake until a cake tester inserted into the center of the cake comes out clean, about 1 hour 10 minutes. Let rest in pan for 10 minutes, then turn out onto a rack to cool.

2. Banana Breakfast Smoothie

Ingredients
? 1/2 cup low-fat milk
? 1/2 cup crushed ice
? 1 tablespoon honey
? 1/8 teaspoon ground nutmeg
? 1 frozen sliced ripe large banana
? 1 cup plain yogurt
Method
? Combine first 5 ingredients in a blender; process 2 minutes or until smooth.
? Add yogurt; process just until blended. Serve immediately.

3. Banana Berry Parfait

Ingredients
? 1 banana
? 1 cup frozen berries of your choice
? 1 cup granola
? 1/2 cup yogurt
Method
? Place frozen blueberries (save a few to garnish) and half of the banana in a blender and blend until smooth.
? Add frozen berries and half banana in a blender.
? Divide the berry-banana mixture between two dessert cups or parfait glasses. Layer granola and banana slices.
? Top with yogurt and garnish with a few berries and some granola.

4. Banana, Ham, and Cheese Sandwich

Ingredients
? 8 slices white bread
? Cheese Slices as needed
? 8 slices ham, thinly sliced
? 2 bananas, peeled and sliced 1/4 inch thick
? 1 tablespoon butter
Method
? Top a slice of bread with 2 cheese slices; top with 2 ham slices and another cheese slice. Arrange banana slices on top, and cover with 2 more cheese slices and bread. Repeat to make 4 sandwiches.
? Melt butter in a large nonstick skillet over medium heat. Cook sandwiches in skillet until golden on one side. Flip, and cook until cheese has melted and bottom is golden brown. Serve warm.

5. Low Fat Banana Fritters

Ingredients
? 3 medium very ripe bananas
? 2 tbsp sugar
? 2 large eggs, beaten
? 3 tbsp flour
? 1/2 tsp vanilla extract
? 1/2 tsp cinnamon plus more to sprinkle on top
? 1 tsp powdered sugar
Method
? Mash the bananas. Add sugar, eggs, flour and vanilla. In a large skillet, heat on low flame.
? When hot, pour 1 tablespoon of batter for each fritter. When cooked on one side (1-2 minutes) flip over and cook the other side.
? Set aside in a dish and keep warm in the oven as you repeat with the rest of the batter.
? When ready to serve, put 4 on a plate and top with a little powdered sugar and cinnamon. Serve with low fat ice cream. Makes 24-26 fritters.

6. Banana Coconut Ice Cream

Ingredients
? 1 1/2 cups reduced-fat milk
? 1 cup cream of coconut
? 1/3 cup sugar
? 1 1/2 cups mashed ripe banana (about 3 bananas)
Method
? Combine first 3 ingredients in a medium bowl, stirring until sugar dissolves. Stir in banana; cover and chill.
? Pour mixture into the freezer can of an ice-cream freezer; freeze according to manufacturer's instructions. Spoon ice cream into a freezer-safe container; cover and freeze 1 hour or until firm.

7. Chocolate Peanut Butter Banana Pops

Ingredients
? 3 bananas, sliced into thirds
? 1 cup chocolate chips (try dark chocolate for extra decadence)
? 2 tablespoons peanut butter
? 9 popsicle sticks
? Wax paper
Method
? Cut the bananas into thirds after peeling. Gently push a popsicle stick into each banana piece.
? Lay the banana pops on wax paper and put them in the freezer while you complete the next steps.
? Combine the chocolate chips and peanut butter in a bowl. Microwave the combination until melted (Keep an eye on the mixture so you don¡¯t burn it!). Stir until smooth.
? Pour the mixture into a tall drinking glass. Remove the bananas from the freezer.
? Dip each banana in the glass and coat it completely.
? Lay the bananas back down onto the wax paper and put them in the freezer. Remove after about 5 hours and enjoy!

8. Chocolate Baked Bananas

Ingredients
? 4 ripe bananas
? 2 x 32g bag chocolate chips
? Vanilla ice cream, to serve
Method
? Heat oven to 200C. Make a slit through the skin of the bananas along one side ¨C making sure you don¡¯t cut all the way through to the other side. Poke in the chocolate buttons along the cut.
? Put each banana onto a sheet of foil and crimp the edges together to seal into a parcel. Transfer to a baking sheet and cook for 25 mins until the bananas have turned black.
? Serve with a scoop of ice cream and any melted chocolate that has escaped!
